I've been through a few sweeteners. Splenda started to have a very unpleasant taste to me--like ammonia. I though pure stevia was ok but it's so bitter in some things. My latest is erythritol. It's less sweet than sugar but I don't mind (I've list my taste for sweet) and NO bad flavors. Slightly sweet, very neutral. Hard to find, however. Truvia is a combo of erythritol and stevia but very expensive. I haven't tried it but people really like it. E is a sugar alcohol and supposedly very safe.

SU , lower carb but not low carb has got to be better than high carb, but if you are a glucose burner you miss some of the benefits like hunger suppression. Over time you may find it easier to lower carbs more.

If you're in ketosis and eating enough fat, there is NO reason to carb load before or after exercise. But if you are glucose burning, you will crave them badly as your blood sugar drops.

Has anyone else noticed a reduction in pain and inflamation? I have suffered from chronic joint pain, mostly hip, incapacitating at times, for 20+ years. Started cpap in dec 2010 and low carb in feb 2011, and my pain has been all but nonexistant since then until just this past week. Winter/spring has always been a flare up time, but there are a few things that could have agravated it.
I was just suprised at not hurting for a year. Taubes talked some about inflamation but I could never find that segment again.
Has anyone else experienced changes in this?

I hang out at lowcarbfriends.com . There in the recipe section you can find lots of ideas.
Lots of us there make our own low carb chocolate using coconut oil, cocoa powder and an
artifical sweetener. Different people use different proportions but you could start with the
ratio of one tablespoon of coconut oil, 1 tea spoon of cocoa powder and 1 tea spoon of splendia.
Coconut oil melts at about 72 degrees so may need to be put in the refrigerator for a few minutes
to set. But total time to make about 5 to mix it and a couple to let it set up. If you find it not
sweet enough simply remelt and add more artifical sweetener. Oh there " cheese cake factory "
cheese cake taste like a real cheese cake!

In the SAD (standard American diet) there are way too many Omega6's. Those cause inflammation. Omega3's are the better choice. ALL vegetable oils tend to be high in Omega 6's, that's why Coconut oil, butter, lard, bacon fat, and olive oil are much better choices. Contrary to popular believe, it's the carbs not the fats that make you fat. I know, I've lost 100lbs eating this way.

Dr Davis talks about this too in his book "Wheat Bellies" The effect of modern wheat on inflammation of joints. My housemate has the book right now(and is battling a migraine) so I can't give you the technical details.

Thanks, I just checked and my library has it on CD. I go to sleep if I try to read.
The night this flare up started, I was walking out of a restaurant with friends and attributed it to hard wooden tavern style chairs. But it's been 2 weeks!
I don't eat any grains at home, but you never know what's hidden in the food you eat out.
