No weighing or measuring is required. Eat until you are satisfied (not so full you feel like you're going to bust). Eat whenever you are hungry (ALWAYS have protein and fat if you snack!). Soon you will learn to let your body tell you when to stop or to eat--it will. If you eat good meals with protein and fat you will find after a while there is rarely a need to snack, but at first, while your body is burning up its glycogen stores and converting to a fat burning machine you need to eat more often.

One day soon you will find that you simply aren't hungry when you would otherwise want a snack. See how long you can go without the snack and you may surprise yourself to find you can wait for the next meal.

In this way, LCHF becomes a lower calorie diet by default, but you don't have to suffer ravenous hunger and blood sugar swings that characterize low calorie diets.

Thanks, so much Janknitz, I am not really snacking or really wanting to snack, at night when the hubby is eating everything but the kitchen sink, (because it's full of soap bubbles) I do desire a bit of ice cream, never was a big ice cream fan but now it looks good to me. I appreciate all your help!

Ice cream is the ONE thing I miss. I've been collecting recipes for low carb coffee ice cream to try out this summer.

I sliced a few strawberries and added them to Fage 2% fat plain yogurt (wish I could find the full fat version, but can't), and a touch of Truvia..... Better than ice cream!! This is my first time eating Fage yogurt... it is decadent!

Emilia, If you can find full fat yogurt, you can strain it through a coffee filter and make your own greek style.

Someone mentioned Dreamfield pasta.....is it really safe for a diabetic to eat Dreamfield? I read that it was a scam product. Not sure what to do, as I love my pasta

I can't attest to its claims, but I have tried it, they sell it in my local supermarket and the label claims 4g net carbs per serving. It tastes just like regular pasta to me.

I'm not diabetic, but I read this and would steer clear of Dreamfields' products unless I had tested it upon myself (n=1 study):

I noticed the article referenced above was removed from the journal because the investigators didn't get IRB (Investigational Review Board) approval prior to conducting their study. Sloppy, but it doesn't affect the validity of the results, just that they didn't properly handle enrolling human subjects in the study, an administrative and legal matter, not a technical one.

Jimmy Moore is a force to be reckoned with in the low-carb arena. His blog and broadcasts are worth listening to.

Another easy delicious meal or snack:

Large white mushrooms (3 or 4 makes a meal), with the centers cored out. Put a tsp. of salsa in the middle of each, shredded mozzarella on top, microwave for 15 or 20 seconds until cheese melts. Then top with some Caesar, or Ranch dressing if desired.

Low carb & yummy-licious!

I am now 7 weeks wheat free, and about 1 month on the CPAP. I noticed a lot less joint pain after about 1 week wheat free...enough to be a believer that it is not good for me. So nice to hear others are discovering this for themselves!

Getting rid of constant skeletal pain is the reason I'm willing to stay wheat free. I used to think I'd gradually return grains to my diet when my weightloss is achieved. But why would I ever want to be in that kind of pain again???

Janknitz, your posts are the reason I have gone grain free, the achy bones and joint were keeping me from wanting to do anything, hurting all the time, now in just a week and half I see a great difference. I can even tolerate the cpap when the AHI goes about .7. Now I just need to keep from getting in a food rut, all your recipes and others on this thread are a God-send. Eggs, cheese, meat, berries, nuts, guacamole and a few sunflower seeds are now my mainstay. Not missing the bread, potatoes, rice, even the sugar craving has subsided quite a bit! Thanks everyone!!! Your support is what keeps me going!!

My pain has dramatically lessened. I'll do this forever.
That said, I have a hard time eating enough protein. I'm past worrying about the fat, but the calculators call for me eating 107 grams of protein per day. I often find myself not hungry, sick of cooking and sick of eating!
So, for awhile I think I will add whey protein to my coffee and see if that gets the numbers right. I don't want my body eating muscle. Does anyone else have this problem?

I was having a hard time eating enough protein too, but some of the low carb Paleo docs are saying we don't really need that much. Too much turns into glycogen, anyway. For a woman, unless you're very tall and muscular, 80 - 90 grams/day is fine, and I find that much more doable.

I got sort of dependent on protein shakes because my midday appetite is wonky so I'm trying to wean myself off them. I think they were part of the reason I've stalled. I'm adding raw egg yolks (pastured and from a trusted source) to almond milk smoothies instead and trying to have other protein during the day. That seems to be working better for me except I don't always eat enough during the workday.
