With the minimum EPAP of 5 with a PS of 3, am I right to think that it would still allow me to put in a starting EPAP of 4 which would mean a starting IPAP of 7?
If so, if you think that would be better than trying to change the PS I can give that a go tonight.

Yes, you could set up a ramp setting starting at 7/4, that would go up to 8/5 at the end of the ramp time.
