I had a good experience using the Allina Health Clinic at Bandana Square. They have an associated sleep center where 5 rooms in a hotel are used as their diagnostic overnight sleep study areas.
The particular PA-C I used has moved on, but the PA-C I saw for my one year checkup seemed good too.

I've also heard good things about the Fairview Clinic/Sleep Center located near Southdale in Edina.
