Would this set-up work for 2 cpap's at a time? My husband and I both use a cpap and motorcycle camp so we are limited on space etc. If this would not work then could you other a simple, easy to do, solution?

Short answer: yes, it will power two CPAPs.
But only for roughly half the time between recharges. How long that is depends on the CPAP machines and their settings. If at all possible, do NOT use the 110v output. The conversion from 12vdc to 110vac and back to 12vdc is very inefficient and wasteful.
The built-in radio is a waste. You shouldn't use it even if you can (if you are worried about extending capacity for CPAP.)
I'd bet you can find a lighter, cheaper unit with the same power specs.
