I started a new job about a month ago, working 9-6 Monday-Friday. I get probably 7-8 hours of sleep every night. I have felt pretty well rested during the week without too many issues, but on weekends it is a whole different story.
I am tired all day long and have a terrible head ache as well. I have had to nap almost every weekend and it isn't a good thing.
I'm not staying up much later than during the week, an hour at the max, but usually not more than a half hour. I am sleeping in at most an hour more than normal, but it's not really great sleeping in.
My numbers are pretty similar as well during the weekend. I am at about 2AHI during the week and 2.4 on weekends, so I think that's more just random.
Also I don't drink, I don't go party or do anything wild on weekends.
Does anyone have any idea why this would happen? I feel like getting to sleep in on weekends should make me feel better.

Try getting up at the same time on weekends, just as an experiment.
Is your caffeine use any different on weekends?

I guess I could try getting up at the same time, but would adding an extra hour of sleep make this much difference?

Despite having good numbers, I would want to check into things a bit more if I were tired all the time and had headaches while on cpap ... maybe wear a recording pulse oximeter a few nights to see if you are still having desats despite the good numbers. Are you having a significant amount of awakenings for any reason? Does your data show anything out of the ordinary when you look at it hour by hour?
Depending on how high that caffeine intake is, you might want to decrease and see if it makes you feel any better.

I've been trying to sleep less. Before I had breathing issues, I had 6 to 7 hours of sleep which I functioned quite fine on.
On cpap, I sleep closer to 8 hours and I'm not feeling much better. I went to bed early last night and woke up after 9 hours today, and I've been feeling like I was run over by a truck. It made me wonder if oversleeping can make someone feel this way.

It really could be anything! I think you will have to put on your detective hat and start smoking your pipe and think about what is going on.
I mean we could come up with 1,000 of reasons, so you have to do some critical thinking.
Ok, it's winter time here, some people get what is called SAD. It affects there energy and mood. This is a possiblity.
What about your stress? It is a new job, are you putting all you energy into it, that on the weekend you just crash mentally and physically?
Any depression or anxiety, or worries that are affecting you?
I am not sure that I could come up with a good reason why you would be tired on the weekends for no reason at all. Though usually an illness won't take the week off and come back on the weekend, so I am thinking my be this a stress / emotional related.
