If it's just an hour or two, I usually leave the machine as it is, as it won't matter to me much. I'll usually know if I look back at my data that it might not look right in terms of timing.
If you really want to match the high resolution data up when reading the data into ResScan then it would probably be better to change the time manually. When traveling though, you have lots of other things to worry about and changing the time on the CPAP usually is low on my list of things to do.

About the closest thing you can do is wear and use the machine while awake to log the hours of use. The machine doesn't know if you are awake or not. Use it while watching TV.
Were you wanting to have more hours of use logged for insurance compliance or hours of use requirement for DOT (over the road) truck driving compliance requirements.?
