I have been eating low-carb since Christmas, and my annual physical for the Fire Department revealed the following (March 9th 2010):

Total cholesterol lowered from 229 to 198 (>200 desirable)
Triglycerides lowered from 201 to 75 (>150 desirable)

All this while eating lots of fatty beef, pork, chicken (with the skin), pork rinds, cheeses galore, and nuts (along with non-starchy veggies).

And the City Nurse said she rarely sees a blood values sheet with not even one thing outside of normal values - but mine was.

I have recently started a low carb diet based on the Atkins formula. I have only been doing it a week and I have not been back on the scale yet. I do not feel starved by following this plan and I hope see decent results by Valentines Day (so we can go out and eat a sensible meal together). Since most of my sleep apnea events occured during REM sleep I may have been teetering on the edge of possibly becoming diabetic if I had continued living without CPAP therapy. Now, I am going to work on the extra 30 lbs I need to get rid of. I was already planning on cutting out all of the pre-packaged over preserved food before the diet. Its so much better to live eat real food minus all the garbage that is added humans don't need.

Yes dear, shop the outside aisles of the grocery store and you can lose weight. The inside aisles will pile on the lbs.

I just started the Physicians Weight Loss Center program.
They weren't very happy I opted to eat only real food--at least until my blood sugar is predictable;
I begged off because of my diabetes, and need to avoid low blood sugar.
I consulted with a diabetes educator before I started, and she is behind my choice.
I have 40 pounds to lose to get to my healthy weight.

While we do not need to completely eliminate carbs from our diets, many experts belive the less we take in, the better our overall health will be. There are many reasons why a low carb diet will help, but the main reason is the fact that high carb intake is linked to high insulin production.
