Thanks DreamStalker. That was very interesting reading. I will definately save that. Even after 30 years, I have alot to learn. I work as a waitress during dinner rush. I eat the same thing every day before I start work because I know it will keep my blood sugar from falling while I'm running around. Half a turkey sandwhich on whole wheat bread. The bread has 21 grams of carbs per slice which works perfectly for me.

Mom has type II diabetes and is controlled by medication and one insulin shot in the morning.

Her diabetes is better controlled now than it has ever been to the point she has to be concerned about overnight hypoglycemia. To combat that she usually has a bedtime snack of "Boost" drink and something else.

To reply to the person who said that Rocco's A1C was still over 7. This is true, but his hemoglobin A1C level did decrease. Remember, a hemoglobin A1C is a THREE MONTH measure. So being on a vegan diet for 30 days will not account for the previous 60 that he was on a western diet. After 3-6 months of being vegan, his A1C level will be on target

I realize that......I ain't that friggin' stupid!

But, that does NOT mean that he is "cured" or "normal". It means that he's CONTROLLING his blood sugar through diet (and I presume exercise).
