They do measure air flow from the nasal passages as well as the temp of the air flowing in and out during a polysomnography.

At the clinic I had my sleep study done they had Embla gear + Somnologica for Embla SW.
They say their cannulas measure the flow through the nasal passages and I remember that
the airflow thermistor was attached to it. See here.
