A few years back, for medical reasons unrelated to cholesterol, I started on a diet where I could eat all the fruits and veggies I wanted, including the high carb ones, except not white potatoes. The idea was to have 80% of your plate with fruits and veggies. The rest would be high quality protein like fish, organic meat and chicken, and some legumes. That 20% could also include a couple of grains: millet and quinoa, but no other grains. You could eat as many fruit and veggie snacks during the day as you wanted. You could have things like olive oil, but not dairy products. No refined sugar of any kind, no honey, syrup, molasses, etc. No prepared foods, everything from scratch, like salad dressings. No caffeine.
I lost 25 lbs on this diet and did not feel hungry ever, since I could eat foods like bananas and pineapple if I did. I did feel somewhat spacey for the first week. In fact, 25 lbs was too much and I had to stop the diet because I'd lost too much weight. However, it brought my cholesterol down, with a good LDL/HDL and triglyceride profile. After the first week, I felt full of energy and this was even with sleep anpnea!
I later discovered that I was gluten intolerant. Some people point to grains (and the way grains have been bred for extra gluten) as the culprit in a lot of the problems many people have, ones who may be somewhat sensitive to gluten. Many people have allergies to grains of various kinds. I think that lumping all carbs together may be a mistake. That sure was true for me.
When I have time in my schedule (not during peak workload times like now) I plan to try and figure out a modified version of this type of diet where I won't lose weight, since I'm now at a good weight and wouldn't want to lose more than 5 lbs, if that. I really do think that, once apnea is taken care of, having a diet that works for the individual will make a big difference.
