Hello,
Can anyone tell me why water builds up in my hose and mask through the night?

The room air is cooler than the hose surface. Like condensation on your car window.
A heated hose is most common these days to help.
A cover over the hose will help - called a cozy or many other names.
Or simply dial back the temp on the humidifier.
