The guys that I follow don't think this is likely. Two reasons: 1) So far, there is only one strain (contrary to what the media blares) and 2) the virus spike is its weak point - plenty of epitopes for antibodies to attach to.
In any case, should a new strain develop, the platforms are there to modify the mRNA vaccines. This could be done in six weeks. Production would be the bottleneck.
