Out of town with no distilled water. Is it ok to just use tap water for a couple days?

Yes.
Tap water or bottled water is fine and won't hurt anything.
If you can drink it you can use it.

It's ok to use tap water all the time, just give the water tank a vinegar soak now and then to remove any mineral deposits.
