Nothing like a good crawfish boil and crawfish etouffee. Learned to eat them when I was in Louisiana. Same place I learned about jalapeno peppers with fried chicken.

Okie bipap - Glad to hear someone else appreciates the food of Louisiana. I think for me, crawfish is a good way to mark the change in seasons, the same way other people look forward to pumpkin in the fall or tomatoes in the summer. Someone I know in Pennsylvania reminded me they can have crab boils to mark their season changes, so I guess it's not unique to Louisiana, and I'm happy people can get together and make a mess over some newspaper and seafood in lots of places across the US.

and yes, fried chicken with jalapenos sounds pretty good! I also enjoy boudin - had it at my friend's little brother's soccer game. always fun to experience the differences in US regions.

I was stationed at Barksdale AFB (Bosier City) before I went to Alaska, then came back to England AFB (Alexandria). Learned about the jalapenos in Bosier City, and crawdads while in Alexandria. I also ate a lot of Cajun food while living in Fort Worth (Razzoos restaurant) and Pappa Dieux.

Okie bipap - I think one of my friends has to take I-20 for work and occasionally gambles somewhere near where you were stationed. apologies if you have told your story on these boards before - but were you in the air force a long time? How did you manage being in the air force and having sleep apnea? And I agree, papadeaux's is a nice treat, haven't heard of the other restaurant you mentioned.

I spent 20 years in the service and retired in 1983. Was not diagnosed with sleep apnea until around 1996, but opted for surgery at that time and did not start using a bilevel machine until 2015.
