There is one thing that is good about this silly fad. I have a friend who
does have celiac disease. Now there are many more foods that are available.

It is a shoddy story, that's for sure, and I don't doubt that industry efforts were made to influence nutrition science. I have to ask, though, why did this special interest prevail over the competing influence peddlers? The victory of Big Sugar was at the expense of Big Meat and Big Egg. Where were the Federation of State Beef Councils and the American Egg Board while all this was going on? It becomes hard to attribute the long dominance of "bad fat" over "bad carbs" schools of thought to corruption alone if money flows from all sides. Maybe some of these scientists actually believed what they said and had evidence they thought supported it.

Leeches and bloodletting were firmly believed in at one time also............. My wife's cardio doc STILL believes that carbs are OK and fat (all fat) is bad and causes arterial plaque. FWIW... I'm fairly certain that the Statin folks pay for his Porsche & vacation trips, too.

Carbs are actually OK if you are active enough to metabolize whatever you ingest; and have healthy metabolism.
For too many of us, that bus is miles out of town.

Yup. And....there's a
big difference between the types of carbs, and how fast/slowly they're converted to sugar. (veggies good - bread bad) (beer too )
