OT: Word for the day: retrude

Post by palerider » Sun Sep 04, 2016 12:44 pm

Today's word, thixotropic, as in thixotropic jelly, the substance that cushions fiber optics in undersea cables, what's surrounding the bits that some of you are reading this forum with.

At some point, it became faddish to say, when you are eating excellent french fries and shake the ketchup bottle to get ketchup out, that the thixotropic property of ketchup is why the shaking action aids in getting the ketchup out and onto your fries.

But, this is a misunderstanding. It's actually the yield stress that does the job when you shake the bottle.

"Thixotropic" impresses people more, but "yield stress" is the correct term.

Of course, squeezable bottles brought a new dimension.

Of course, ketchup usually leaves the bottle according to more common rules.
Otherwise, why else would half the condiment end up all over fries, plate, table, and dining companions?

er, no.
Ketchup is not a thixotropic fluid, nor even related other than being in an entirely different class of non-newtonian fluid.

Thixotropic is characterized as having a time dependent viscosity, and it's apparent viscosity decreases with the duration of the stress, such as: Yogurt, xanthan gum solutions, aqueous iron oxide gels, gelatin gels, pectin gels, hydrogenated castor oil, some clays (including bentonite, and montmorillonite), carbon black suspension in molten tire rubber, some drilling muds, many paints, many floc suspensions, many colloidal suspensions.

Ketchup, actually is in the class of time-independent viscosity, it's sheer thinning, (pseudoplastic) and it's apparent viscosity decreases with increased stress. things such as: Nail polish, whipped cream, ketchup, molasses, syrups, paper pulp in water, latex paint, ice, blood, some silicone oils, some silicone coatings, sand in water.

nice try, whoever's posting as Granny today.

Yes, faddish it was. Ketchup even made it into urbandictionary.com definition of thixotropic and, more surprisingly, Wikipedia.

Maybe you want to edit the Wikipedia article, Granny?

perhaps she did.... since it conflicts with the entry on non-newtonian fluids: https://en.wikipedia.org/wiki/Non-Newtonian_fluid (which has rather more references)
