OK, so there is a resistance control but my clinician has locked that function, so I can't change it. I've only got this machine for another week anyway, so I'll just put up with it until I get my own.

With non Respironics masks we are told to set it to 0 which is off...and yours may already be off.
You may need to go into the clinical setup menu to get to the Resistance control setting if it isn't available to you now.
Should be explained in the provider/clinical manual for your machine. Do you have it?

That was it! I visited the page you linked to, and there are instructions on there for how to get into the Clinicians menu. I changed the resistance control to match the number on my mask, "X2", and bingo! Breathing on my Nuance Pro is so easy now.
