My wife has had 3 nights now on the CPAP and her AHI numbers were 5.1, 5.7, and 5.2. I looked at this with SleepyHead and it is 90% OAs. I haven't seen her sleep lab report, but I remember she saying they told her that she had essentially no apneas with the therapy. Other than that, she is doing great and likes the therapy.
So just a quick question, to hold us over until she sees the sleep doc in a month.
1. With her pressure set at 7, should I up it to 8 or 9 to see if that reduces the AHI?
2. Also - with her S9 Elite machine, they gave her a slimline hose which I suspect she didn't use in the lab. Should I try replacing that with a regular hose?

The hose shouldn't make any difference unless the wrong hose diameter is selected on the machine's menu.
Do you notice any clustering of those events? Like maybe during a time frame where REM stage sleep would be?
It might be that she is having more stubborn events during REM or supine sleeping that simply need a little more pressure than what might work well at other times during the night.
If it were me I would try 8 cm first...Might be all that is needed and even if not...starting with smaller increases makes it a little easier to get used to.

Both items you list are worth trying. One possibility is that she is sleeping much better than before, and now her body is more relaxed, and that can cause the airway tissue to droop a little more and make the events a little more stubborn. Another possibility is that she is sleeping more soundly, which means better REM sleep, and some folks have more issues with events during REM. Better REM sleep can mean events that are a little more stubborn than what they saw in the lab.

Your Wife has been on the machine 3 days. I can only speak for what worked for me. Give her a week or 2 without making any changes until she gets use to being on the hose. Then if necessary make slight changes as needed. It takes me a couple of weeks to get in sync, even when changing to a different mask.

I also agree with giving it a few weeks. I didn't start tinkering with my numbers until 1.5 months out.
