Lucy, I found this thread 8 days ago, and I have been grain free, wheat free every since, except for a very small piece of Easter Bread, (really didn't crave it) so I'm not sure why I ate it. Anyway, I have allergies, and intolerances to both environmental and ingested things, and several spinal issues and suspect significant fibromyalgia, and I HAVE NEVER FELT BETTER than I have this past week. My first 2 or 3 days were tough but not undoable. I struggle with CA's and even 1.6 AHI's keep me in a fog and feeling awful, but since I've been off the grains I am beginning to tolerate that AHI, which is suppose to be a great cpap result for others. I agree that your machine may be wrong for the type of treatment you need, but I don't have the expertise in cpap others can share. I did want you to know how being off grain has helped me with the cpap treatment and aches and pain I have on a daily basis. I wish you good luck and send you my best!

Wheat sensitivity is one possibility in the scenario that the OP described. Unfortunately, pinning down the exact cause can be very difficult. However, if you are able to stop all wheat products for a period and have your 'symptoms' get better, then restart wheat and have the symptoms return with a vengeance, there is a strong possibility that wheat is at least one element in the mix. Wheat is no longer a simple grain - all the genetic mutations that have been introduced to achieve various "wonders" have corrupted the original product - and who knows what each of those mutations does for each and every one of us. Personalized medicine does not go that far. I hope that I keep an open mind about what ails me, and try to find creative solutions. I have learned that there is never one perfect answer to the riddle of sleep apnea. We have to keep searching until we find the answer that suits us as individuals. Regardless of whether it is a different machine, a different mask, or a different diet. Somewhere there is (hopefully) a solution. So, to the original poster, please keep asking questions as they occur to you. Take the responses with a grain of salt until you have tested the ones that make sense - if needed, talk to your docs first. Then come back and let the world know what worked for you!
