Yep, and if you have a lactose intolerance (which I do), you can use homemade 24-hour yogurt instead of the milk. Or, if you don't mind the coconutty taste, coconut milk.
I also make "souffle bread" with mostly egg whites, a couple of the yolks, and a couple tablespoons of pecan flour. The other egg yolks go into a custard, or into homemade Caesar salad dressing.

"Limited" must be the operative word! I have gained another pound, and considering I'm not eating much else potentially responsible, I think the nuts will have to go. I do eat pumpkin seeds. Should those also be "limited"?
I make kale chips, too. Trader joes sells bags of washed, torn kale. I spray them with olive oil and sprinkle with salt and bake them in the oven (or dehydrator) until dry and crisp. They hit that "salty crunchy" spot.
We've made this before. I should try it again. What temp do you bake them on? 400 F?

I lay them out on parchment on one of those pizza re-heating pans (hey, when I gave up store-bought pizza, I had to do SOMETHING with the pans!) and bake on 350F for 10-15 minutes.

Thank you; I'm looking forward to it. My popovers came out fine (YAY!), but I'd rather be using coconut flour than rice and potato starch flours. Gluten-free is a huge step in the right direction; I'd like to leap further in that direction with low-carb.
