Yes but it is expensive. Before I moved in to look after the parents I was living off $30 per week. That meal would have set me back at least $15. Low carbing, especially if you live in a northern climate is High priced. My housemates and I shopped the flyers carefully and invested in a small freezer, however even the stews had to be stretched with carbs like sweet potatoes, carrots and beans and rice.Janknitz wrote:Who needs "comfort foods" when you have a dinner like I just did?

V8 can be your friend.
A little can can goes in my purse, and I've got a portable vegetable serving:
--only one left to purchase (separately).
Not the best in sodium, but it beats the heck out of fries (nutrition-wise), and provides good electrolytes.
Fastest veggie to down if I don't feel like savoring it. It also makes good borscht, and works in chili.

I also cook cheaper cuts of meat, roasts in a pressure cooker. It makes them melt in your mouth tender.

We are on a tight budget too, so I totally understand. You have to do the best you can with what you have. Carbs are cheaper than good meat, eggs, fish and veggies, but your body pays the price. There are a lot of other things we don't spend money on, because our first priority is a healthy food budget.
I'm very fortunate in that my husband's employer owns an organic farm and raises grass fed beef for fine dining restaurants in the SF bay area. We get an employee discount at the farm, and some of the lesser cuts of beef that the restaurants don't want is also for sale there. So we pay less than we would at our discount supermarket for conventional veggies and beef and we get this high quality fresh stuff. Otherwise we could not do it.
DH also found an egg farm around the corner from his work that sells pastured eggs and cartons of "crazy eggs" (oddly shaped, funny looking eggs they don't put in their more expensive cartons) are about the same price as conventional eggs in the grocery store.
We grow our own tomatoes during the summer, and some herbs, so that helps too. I make my own yogurt, which is much cheaper than buying it. We buy very little that's processed or packaged, and we try to buy in season. I freeze what I can get when it's on sale (and I'm thinking of trying canning). I recently pulled out our dehydrator to preserve foods, too. Every little bit helps.
BTW, I don't have an expensive, fancy espresso machine. I have a little stovetop Bialetti percolator and a cheap Ikea battery operated milk frother. So I don't have to spend money at Starbucks, either!

Didn't want to start a new thread, but on the way home from work this afternoon I heard an interview of a cardiologist who was making a credible case for low-carb diet on a local radio station. The talk show hosts are notoriously hard-nosed types who love to mix it up with anyone they think is a fraud. They were uncharacteristically polite with Dr. Lundell. So here's another medical practitioner who "gets it."

I was looking into making popovers from a gluten-free cookbook, but DH came home from grocery store saying that our health-food store does not carry potato, rice, or sorghum flours in bulk. I only wanted a couple of cups each to start experimenting, but they come in 5-lb. packages, and are really expensive. I'm a notoriously bad baker, so I really just want to do a test batch to see if it's possible to make a baked good that doesn't have the texture of a hockey puck. Maybe coconut flour is more accessible in my area.

I found the world's easiest recipe for low carb crepes: 2eggs, 2 Tbsp of coconut flour, and enough milk or cream to get the batter the correct consistency. They are really yummy made with a mixture of olive oil and butter in the crepe pan.
I'm making blitzes this weekend--Whoo hoo! They would also be good "wraps" or a stand in for flour tortillas.

We used to go barefoot all summer when we were kids in the country and suburbs (and I pulled fish hooks and glass out of my little sisters feet) But I still have flat feet and fussy knees, even more so after I damaged them cycling.
If you must wear shoes make sure they give you the support you need. If your arches fall, you ankles go out of allignment, your knees start having problems, your hips don't line up which causes the muscles in your butt to tie up your sciatic nerve....
Most people are not Olympic athletes - just walk behind people and watch their ankles and feet and see how their shoes wear down, then think of a house with crooked foundations.

1tbsp of coconut flour has 8 carbs, BUT it also has 8 g fiber and you get to subtract the fiber from the carbs for a net count of ZERO!
Nuts are permitted in limited amounts. Be aware that nuts have a lot of omega 6 oils and they should be limited because they are easily oxidized which can cause inflammation. If you are craving salty carbs, my favorite substitute is pumpkin seeds--salty, crunchy, and they take a little work to eat. I make kale chips, too. Trader joes sells bags of washed, torn kale. I spray them with olive oil and sprinkle with salt and bake them in the oven (or dehydrator) until dry and crisp. They hit that "salty crunchy" spot.

One thing I like about coconut flour is that you use a small amount of it, but you do use a bunch of eggs. OTOH, I can find quality eggs fairly inexpensively.
I get my coconut flour from Tropical Traditions. If you sign up for their newsletter, once a month, they have free shipping. You just have to look for it. They have a whole slew of other stuff -- oh, I also get the expeller pressed coconut oil from them, which I use for frying and to thicken my mayonnaise -- but frankly, I can't afford most of it, though I wish I could!
I'm having an argument with Word at the moment, but as soon as I can extract a copy of my recipe, I will be glad to share it.
(Edited to change a typo of "drying" to "frying." Not sure how you could "dry" anything with coconut oil!)
