OT: food sensitivities - gluten, yeast etc.
Had an IBA (Intestinal Barrier Assessment) 22 IgG panel done & found out I have food sensitivities to Brewer's Yeast, Yogurt, Baker's Yeast, Kidney Bean, American Cheese, Cow's Milk, Gluten and Oats. Yikes! I guess losing weight should be no problem going forward! Not sure whether to or
I am posting this here in the hope that others here who may have experience with eating gluten-free AND yeast-free can point me in the right direction toward online resources. I have done the standard Google searches and haven't been terribly impressed with what the search engines have yielded.
I am meeting with a nutritionist next week, so I will be getting some guidance with meal planning. This community, however, has been very helpful to me with my cpap journey; I thought that some of you may be in the same dietary boat I now find myself in.
Any guidance will be appreciated.

There are several people following this kind of diet. I believe the member Kiralynx does. You might want to search for her posts. There are several threads on low carb where she has posted links.

Re: OT: food sensitivities - gluten, yeast etc.
RandyJ, I don't know whether to congratulate you or give you my condolences!
I'm doing gluten-free right now. It helped to make a list of things I could eat. I've tried this diet before and end up feeling resentful b/c I can't eat anything. Here are the carbohydrates I eat: sweet potatoes, yams, winter squash, and quinoa. Your list doesn't include butter, so you can use that to to jazz up the sweet potatoes, yams, and squash with. I don't particularly like these foods, but I've got to eat something! If you can't have butter, olive oil and salt is a pretty decent substitute. The only fruits I like are dates, raspberries, peaches, and in the fall, apples, but I rarely eat any of those. If you like fruit, you have more options. For the rest of my meals, I eat small amounts of animal protein and a lot of vegetables. I survive it by allowing myself one "cheat day" a week.
There are many gluten-free cookbooks out there. Not only can they provide alternatives to the dishes you can't eat, but they also explain the basic principles of gluten sensitivities.
Can anyone request an IBA (Intestinal Barrier Assessment) 22 IgG panel? I have wondered for a long time if there was a way to verify medically what a Naturopathic Physician told me years ago: that I am allergic to oats, wheat, rye, barley, corn, and dairy. He didn't say so, but I suspect that millet doesn't do much for me, either. I also wonder if I have a sensitivity to other foods too. Is it a gruesome kind of test or do they just collect a stool sample?
Good luck.

Thanks for the pointers, napstress! My IBA 22 IgG panel was ordered by the naturopath physician I am seeing. She gave me the "kit" complete with mailer. It is actually blood serum that is required; my local hospital blood lab drew the blood & centrifuged it at no charge. They gave me back the serum which I sent UPS to the lab in WI that does the IgG testing. The panel of 22 foods cost me $49 out of pocket (my health insurance doesn't pay for out of state services).

Re: OT: food sensitivities - gluten, yeast etc.
You may want to read Wheat Belly by Dr. William Davis. The root of the problem may be grains in your diet, eliminate them and the other issues may not cause you any more problems. You may want to consider pastured, grass-finished meat and poultry (and eggs) to make sure you are not eating these grains "second hand".
There are tons of delicious recipes on Paleo and low carb sites that contain no grains, dairy or legumes. There's still plenty to eat, AND you will be able to eat tons (including a LOT of fat) and still lose weight (if you want). Eat whole foods--never low fat--eat local and organic if possible.
BEWARE that many registered dieticians and some nutritionists will still tell you that you NEED carbohydrates and have you increasing things like fruit, rice, potatoes and gluten-free grains to make sure you get "enough" carbohydrate in your diet. It's all a bunch of hogwash! You don't need to keep up any level of carbohydrates, and what you get in veggies is more than enough.

Re: OT: food sensitivities - gluten, yeast etc.
Randy,
I've made posts about the Specific Carbohydrate Diet.
Turned out I couldn't tolerate any grains, potatoes of any stripe, lactose, artificial sweeteners, gums, or natural or artificial flavorings.
I eat very well -- but correcting my diet for my food sensitivities allowed me to lose 180 pounds. When I say it saved my life, I'm not kidding.
SCD is seriously worth looking into!

Thanks, Randy! After I wrote to you I saw some of those kits online. How did you get the hospital to draw and centrifuge the blood at no cost?

I didn't have to do anything. They told me that they do it as a courtesy. (Perhaps because they don't actually do IgG testing in-house, I'm not sure.)

Janknitz and Kiralynx, thank you. I will follow up on your suggestions. I have lots of reading to do!!
SCD is very interesting to me, though I am limited since I have to exclude cow's milk, yogurt, etc.

SCD yogurt can be made with goat's milk... or, some of the folks who can't do dairy at all make coconut milk or almond milk yogurt. <evil grin> I've just come up with a non-dairy drink that is like a Wendy's Frosty. And I'm not posting the recipe to the SCD list until after Lent....RandyJ wrote:Janknitz and Kiralynx, thank you. I will follow up on your suggestions. I have lots of reading to do!!

If you are interested in starting the SCD, there's a group on Yahoo, BTVC-SCD, which can give plenty of support and suggestions.

Re: OT: food sensitivities - gluten, yeast etc.
Does your iga test indicate celiac? If so you might want a biopsy via endoscopy. Chances are the iga TTG is accurate enough. Going gluten free under most circumstances will cause improvements to appear if you have celiac. For those who do not have celiac, gluten free may help too. The proteins and lectins in wheat barley and rye are difficult for all humans to digest.
Link to start out with today would be http://www.celiac.com/gluten-free/
books...a good one was the celiac for dummies book.
Wheat belly was a good read. I totally agree with his avoidance of starchy carbs.
More in depth site http://www.cureceliacdisease.org/?utm_s ... eBRedirect
How is this related to cpap? Many of the celiac symptoms can greatly affect sleep. Inflamation can affect sinuses and ultimately reduce and restrict the airway. There is a lot more. Pm me of you have questions. I am gluten free as a result of celiac.

Linus,
The dr didn't actually say "celiac." The results of the IBA IgG test for 22 foods was a total score of 460 ("Moderate" range). The items rated as "High" were Brewer's Yeast and Yogurt, "Medium" were Baker's Yeast and Kidney Bean, and "Low" were American Cheese, Cow's Milk, Gluten and Oats.
Since I have been eating foods from the Medium and Low categories on a daily basis for years, the Dr said it was enough to make my inflammation score (on a different test) so high and to warrant making dietary changes now. I also have congestion issues which I hope will be helped by this change.
I will check out those links and will be in touch.
Thanks a lot!

Can yogurt REALLY be made from almond milk? I thought I read somewhere that it could not, but it sure would be great if it were possible.Kiralynx wrote: SCD yogurt can be made with goat's milk... or, some of the folks who can't do dairy at all make coconut milk or almond milk yogurt. <evil grin> I've just come up with a non-dairy drink that is like a Wendy's Frosty.
