I am looking for more information about EasyBreathe - all I can find is basically a few sentences about it, most of the information is about EPR. I'm not sure regarding a specific "EPR" setting on my Aircurve.
I definitely don't know much, and I just want to learn.

With and without EasyBreathe enabled on my Aircurve 10 VAuto, there is a huge difference in how the pressurization feels. IMO you don't notice the pressure support as much. I feel the work of breathing is less when the feature is disabled.
In looking at my data, with EasyBreathe enabled, I do have a lower respiratory rate and the tidal volume charts do look smoother instead of up and down. With EasyBreathe enabled, it also allows you to enable Central Apnea detection by using FOT. With it disabled, it grays out the "rise time" setting.
I am wondering - since I have restrictive lung disease, my breathing pattern is not optimal - I take slow and shallow breaths, meaning I don't take an adequate enough amount of air in, especially during sleep (hypoventilation). I don't know if my thinking is correct, but I would ask: Why would I want to recreate this suboptimal breathing pattern with EasyBreathe? If anything, wouldn't I want the machine assist or "trick" me into breathing properly?
