I've heard central apneas can be brought on by setting your pressure too high? What would be the signs and symptoms for a regular OSA patient be to see if that's happening or not when he/she titrates their pressure upward?

If you check your AHI and it's going up and you're putting your pressure up- stop. The only real way to know if you have centrals is to find out in the sleep lab. Don't get worried about centrals unless your doctor says you have them. They have no special symptoms.
