I was considering not using my CPAP for a night or two
Bad idea. When we are fighting an infection, we need to sleep and breathe more than ever.

Doctor tells me it's either a different strain of strep and I should take the antibiotics or it could be viral and that I should get rest, drink a lot of fluids, and ride it out
Any fever?
No fever.
I've had some issues with acid reflux/GERD, was supposed to have a scope done, but walked out after the 4th person failed to place an IV... still need to reschedule that, because the suspicion is that I may have a hiatal hernia. I'm guessing that might have SOMETHING to do with it, but I recently started getting tonsil stones, as well. Trying to make sure I'm brushing, flossing, and gargling 2x per day, minimum, and keep my equipment clean, but I'm not 100% consistent.
Things really did feel better when I fell asleep without my CPAP on a few days in a row. Some nights I end up propping myself up on a pile of pillows to help with the reflux at night, but it has been bothering me neck/back. Working on finding an adjustable base for the bed. Hopefully that helps, too.
