How are saline sprays supposed to help with nasal congestion and dryness?
I don't get the logic here. Spraying water in your nose will moisten it only temporarily. It will also wash away some of the oils that make up the boundary layer of the skin that retains moisture. It would be like taking a bath and expecting to moisturize your skin without putting some kind of lotion on after the bath. The reality is it will leave your skin even drier. It seems to me if you have a dry congested nose it would be better to put some kind of moisturizing lotion or oil in your nose than salt water. Has anyone had long term success with saline sprays?

There are saline (and other) rinses that are recommended to use to unclog your nostrils... they are not for adding humidity, but the humidifier should help with that unless local climate is humid enough to not need it and possibly even cause congestion. Things like Afrin are not recommended because they create a backlash effect of needing more to do the job. I'm not sure how water can wash away oils however.

That's right. Saline rinses are for rinsing away pollutants and nasal mucus.

Saline is a good choice when rinsing irritants away is preferred over taking drugs.
