I've been in CPAP for over 10 years and have experienced some of this. Your dry mouth is most likely from breathing through your mouth whether you have a full-face mask or one that's just on/around your nose. A sore throat can also be from the same reason or possibly not a high enough humidity setting on your machine. If you only have a stuffy nose while using the machine (and not also during the day), it is most likely due to the humidity not being set high enough for you on the machine.
Glad your pneumonia is gone! Are you still using extra oxygen with your sleep machine or was that just for when you had pneumonia?
