Rocky Road Ice Cream
Anyone notice increasing AHI numbers after eating rich desserts? Why would there be a connection?

Sounds like a question for your doctor.
My guess would be a couple different ideas. But remember, it's just a guess on my part.
If you are diabetic (even if not diagnosed) the high number of carbhohydrates in the rich deserts might cause you to be sleepier, and less able to manage your normal muscle control during breathing.
Or you might be slightly allergic to some of the items in the deserts. This might tend to restrict your airway a bit more.
Or it might increase your mucous production, again increasing the obstructions in your airway.
But these are just guesses. This is the type of thing to bring to your doctor. It might lead to a different approach to help you better manage your sleep.

now that wasnt nice of the Doc. i mean yeah it may be true and very serious, but still he could have said it much differently
not "sugar coat it" but in a much different way
i mean maybe i am reading too much into it or i am reading it the way it would sound to me.

Maybe you are eating the wrong ice cream, I had rum raisin with apple pie last night, best aHi ever 1.1

Ice cream can cause more mucus, more mucus can probably contribute to higher ahi. I knew a guy that was going to the VA to be evaluated for bronchitis, ice cream would make it worse so he would eat ice cream before an appointment.

Some or most ice cream has carageenan in it, for thickening. If I eat that kind of ice cream, it gives me heartburn. I made the connection after reading about it here, and doing a google search.

I think Katie pegged it. You may have silent reflux from the ice cream, and that causes airway problems that can affect your AHI.
I LOVE dairy products. My favorite thing after dinner is not a cup of coffee or an alcoholic drink, it's a big, tall, cold glass of milk. BUT, nothing (and I mean nothing) is worse for me because I have the worst reflux in the world from milk (probably the sugars in the milk). And believe me, milk does not taste so nice coming back up (sorry, TMI). Ice cream does this as well, but not as bad as a plain glass of milk, for some reason. Anyway, before CPAP, I knew I was asking for it if I had dairy after dinner, but I often did it anyway. Guaranteed reflux that night despite the meds I take.
With CPAP I've been able to get away with dairy after dinner, even a glass of milk--so far in 9 months I've only had ONE reflux episode on CPAP, and I was really pushing it that night.
So that would be my guess, some silent reflux from the ice cream.

When I worked with the amateur opera group the singers were instructed to never ever have fresh diary products (ice cream, milk, chocolate milk, yogurt) before a show because it tends to increase mucous production - ie slime in the throat, which is last thing you want while singing opera.
Plus for me with lactose intolerance it causes GERD at bed time big time! In fact if you have stomach issues you know that drinking milk or eating ice cream will cause a huge increase in stomach acid in order to deal with the fats
