Good morning!
New CPAP user here in the USA. Years of feeling tired and foggy all the time. Sleep study showed AHI of 20; equal mix of centrals & hypopneas with a few obstructions. Had the CPAP machine for a couple weeks now. I have noticeably more energy during the day, but am still not feeling any kind of "good". AHI on CPAP has been 11-17, but that includes some known awake times and getting up to pee. What I am seeing is tons of events all night long, sometimes clustered at specific hours (1&4AM or 2&5AM). They almost all follow the pattern show on the screenshot here- sleeping along without issue, then I'll take a few big breaths, not breathe (machine will pulse, see my airway is clear, mark as central), maybe repeat a bunch of times, or maybe I'll go back to normal breathing. This has been incredibly consistent since day 1. Thoughts on what this might be?

Welcome to the forum.
Those look like SWJ or sleep/wake/junk to me. That irregular breathing that precedes the flagged events means unlikely you were asleep so anything flagged right after it means probably awake/semi awake breathing.

Good morning! And welcome(again) to the forum.
Likely you're just still getting used to using the machine. I takes a good while to adjust. You're having a lot of little arousals during the night, to be expected at two weeks in.
If you're able to wear the mask the entire night, you are doing great. The SWJ should diminish over time.
