ahi count

why does my ahi is around 5 events per hour, than all of a sudden it jumps to 40-50 for a few days

Sounds like your treatment is erratic. It could be that you have a lot of leak, so the machine can't do its job well. Or perhaps you are sleeping differently (medications, alcohol, more time on your back, fidgety from pain, etc) and the settings aren't capable of handling that situation.

Tell us about your machine, mask,and settings. Most machine shave data, and we can look at the graphs and get an idea of what settings would work better for you. Even that low ahi of 5 really isn't that great. Many doctors like anything under 5, but a lot of us don't really feel better unless it is under 2. A 5 still means 5 sleep disturbances, on average, every hour. Not great.
