All I can say is that I doubt his banana bread is any tastier but if it floats his boat, then it is his business. I truly doubt any low carb person made a comment because they don't care what other people eat. Too many bananas vs flour makes wet banana bread more subject to mold before it is all eaten.

After trying over 100 banana bread recipes one year, I have 3 keepers. One uses butter, one uses oil and one uses shortening. All the low fat recipes sucked or had more sugar to escape the cardboard flavor. Using applesauce made a shorter shelf life, but otherwise tasted good (it was a Weight Watchers recipe from the 80s). There were some other good ones, but I didn't want a quick bread that took longer to assemble ingredients than to bake.

How far out in the North Woods do you live?

Around here, low-carb people enjoy telling you to eat low carb more than they enjoy eating low carb. lol

I made chocolate banana "muffins" a couple days ago.
{{{Two bananas had passed their prime, due to multiple doctor appointments,
the ER visit, and hubby in the hospital for about 26 hours.}}}
I added chocolate chips, and used canola oil, subbed 40% of the flour with 100% whole wheat flour,
and half of the white sugar with a stevia product. I could not find the muffin pan,
so I used hubby's brand new Twinkie pan, lubed with baking spray. De-lish, but they looked so,
inappropriate.. They tasted great, and the shape/color was no deterrent.

Can you send some my way as they sound so good? Anyway, I settled for a cheap chocolate chip brownie at the dollar store. I was desperate for my fix.

Yeah, even in the corn and bean fields we love to talk low carb! Corn and beans are for fattening the animals we eat to keep low carb you know!

EDIT: don't use soybeans as feed.

I was raised on grass fed beef, chickens that had free run of the pasture,
and the occasional rabbit or wildfowl that wandered by when Dad was packing heat.
I was skinny as heck until all my protein came from the store. Coincidence? You decide.

The world is full of people who eat grains, rice, tubers, etc. and are not fat. I did low carb for years, but its really no better than the high carb vegan diet I'm doing now.

Whatever you eat, eat REAL FOOD!

I do low carb because of my diabetes. Okay that and I love meat so long as I never named it or kept it as a pet in a pasture or barn
