Curious about report differences

I have been using my looking at my reports for a few weeks now, and have noticed pattern anomalies from time to time. While I have been dealing with mask leakage of varying amounts, and have achieved a somewhat happy medium in comfort, quality of sleep, and leakage (I think). The mouth leakage is no longer an issue (hello tape!). Anyway below are two recent charts: the first is a somewhat 'typical' report, and the second is from last night where I had a number of centrals - the first time I have seen more than the occasional couple. I actually felt pretty good this morning though. What could cause an anomaly like this?

John, could I borrow the tape...just a small piece to help seal a leak...where are you guys getting the data readings?
I don't want one...I would worry myself to death; but I like learning...just not any thing about myself @ this point.
hope I sleep tonight...if not I am calling this kid....who acts like he saw I had problems...lol...nah, I am intimidating to a lot of people...like doctors, cpap delivery people...old nurses are hard to fool...

Mostly from being human! Really, that isn't intended to be a trite answer. There are vagaries in the way our bodies function that simply are inexplicable. For instance, look at these graphs from three consecutive nights for me on May 2, 3, and 4. The first is not uncommon, but not really typical. The third one is pretty much the norm for me. The second? Well, when I first looked at it I basically said, "What the h*** happened that night?" I have absolutely no idea, and I haven't fretted about it since it's a loner, or maybe one of two or three, in all the graphs I have.

Chinese food? That's what happens to me. I think it might be the sodium.

Not that I let that come between me and a plate of Kung Pao chicken, extra spicy!

Note the zero leak line on the April 27 graph with all the apneas!

April 26 graph. There's an OA under the CA.

Sure would be nice if it was something that simple, but I don't think so. Can't even blame regular coffee late in the day. Well, maybe I could for the April 27 one, but then there's the May 4 one! And both are Wednesday night dinners at church with regular coffee!

My favorite! I think its the MSG. I had some spicy Tai food one night and had a long episode of periodic breathing, 23% of that night. I never see periodic breathing, normally.
