Enjoy your turkey - I did last month - still have some in the freezer so maybe I will defrost some the celebrate with you!

Went to bed last night purposed to have an attitude of gratitude today regardless of how much or little sleep I would have to fuel the day. REALLY thankful to start the day after almost 8 hours of pretty decent sleep. What incredible timing. Good to spend this holiday with no new grief or recent loss. Simply thankful for the simple things in life, unfazed by the lure of commercials telling me that 'to have' is more important than 'to be'. Grateful my needs are met, and that my perceived needs are few. To my online friends - enjoy your day today, whether it is noteworthy on your calendar or not. Thankfulness should be an every day event and not reserved for holidays, right?!

Of all the many things smelling good in the kitchen, I am most looking forward to my cornbread dressing, the greens, and Mom's recipe cocoa pie. Oh my! (Well, the greens don't SMELL good, but they sure will be yummy!)

My Norman Rockwell Thanksgiving

Thanksgiving always started on Tues. night.
My mom would make the corn bread for the stuffing.
This was real southern corn bread that she was raised on.
Made w/bacon grease and corn meal...no sugar...
baked in a cast iron skillet.
It had to sit for a day, to dry out a bit.
No amount of begging or pleading would get you a piece of that bread.

Wednesday night the neck, gibblets and liver were simmered.
The onions, celery and apples were cut up.
Then the dried out corn bread and all those flavors and smells came together.
I remember that smell more than anything else about Thanksgiving.

On the big day, I would hear my mom get up at some hour
before daylight, to stuff the bird and get it in the oven.
By the time I got up, the smell of roasting turkey had enveloped the house.

Sometime around noon my aunt/uncle and cousins would arrive.
My dad and uncle would watch the football game.
My sister and I would catch up w/our cousins.
Then it would be time to eat.
That turkey and stuffing, mashed 'tators w/gravy made in that iron skillet,
acorn squash baked w/butter and brown sugar, green beans, yams and
sometimes turnips that had survived in the garden.
There was always a pumpkin pie, but everyone wanted strawberry short cake,
w/strawberries that had been in the freezer since summer ended.

It's my Norman Rockwell Thanksgiving....
the colors, the smells, the tastes, the textures.....the feelings....

captured for some amount of time on a canvas,
in my mind.

The boss has spoken. My glucometer has informed me there will be no seconds from the kitchen for me. Oh well, it was fun while it lasted.
