Hello
I don't how much of a difference I need to have with the min and max settings. Would a min of 10 and a max of 12 (epr 3) work or do I need a wider range? Thank you for your time and advice in advance.

As long as your maximum is never ever reached it doesn't really matter what it is.
There's nothing magical about a tight range or a wide range.
The minimum is the most critical setting...not the maximum.
If you never ever ever reach 12....won't hurt to use 12 at the max....but just bear in mind that when you restrict the max if something changes in terms of pressure needs the machine will have its hands tied.
If you have a wider range it doesn't tie the machines hands plus it won't go anywhere without a good reason anyway.
Now if going higher causes problems like aerophagia issues...then by all means limit the max somewhat.

Anybody that says you 'need' a 'tight range' doesn't understand what they're doing.
What is important, as Pugsy says, is the MINIMUM pressure. the Max pressure is immaterial for most people, and is best left at whatever the machine max setting is, (20 or 25 for most of them).
