where we got to chat and share recipes and what not

So I decided to do it again so we could have something else to talk about and maybe get new ideas for new recipes and snack or whatever.

Some of you know that I have been on a diet of sorts. Not any special fad diet but more of a common sense cut out the crap and big portion diet. I have lost a little over 25 pounds since late July. Primary goal right now is 24 more...get me to 120 lbs.
It's still too much for my petite size but I will re-evaluate my goals once I meet that goal.

I did it because I knew I needed to lose it and I got my ass chewed out by my doctor in July about my heart related blood work results.
There weren't horrible but they weren't normal. He said lose weight and get the blood work looking better or go on meds...like Lipitor.
I didn't want to do that so I said give me some time to get the weight off to see how the blood work looks.

I am happy to report that my blood work done a couple of weeks ago looking so much better...everything within normal range except one little data point and it was just barely high for a woman and if I was a man it would be normal...damn.
Anyway...hopefully when I see the doc in Jan I can have even that result improved upon.
It remains to be seen if I can ditch the blood pressure meds but I have at least avoided those other heart related meds.

So....when I got my good lab results back I also got my hubby's results...he didn't fair well at all and everything worsened instead of improving. Guess who got put on a diet? :lol: :lol:
His blood sugar is my major concern right now....not spilling any sugar in his urine yet but I know that's just a matter of time unless he changes his eating ways.
I didn't want to put him on a strict Keto diet as I was afraid the initial side effects would be more than he could understand so I have sort of put him on a modified Keto diet for now.
Sweets or deserts...we never have been much on those so I had to look at the other sugar source which is of course carbs to target for reduction.
We do love our carbs. :lol: :lol:

I am hoping that with weight reduction his heart related blood work will improve and for right now mainly targeting low carb and high protein kind of thing. I know the fat in meat isn't good but right now his sugar levels are the primary problem. I would rather see him eat a little more fatty stuff than carbs or sweet stuff.

So all this brings me to something I discovered that I wanted to share.
My hubby is an OTR truck driver...gone 4 maybe 5 nights a week. He rarely eats out...I prepare meals for him to take and those meals are fairly diet oriented except for the mashed potatoes stuff which are of course out for the time being.
One of his biggest problems is the munchies he gets because he is bored driving down the road. He eats out of boredom more than being hungry and Cheetos were his favorite munchie.
So I had to find something to munch on that wasn't pure carbs and junk.
One of the forum members told me about cheese crisps...and I found some parmesan cheese crisps at my local Walmart..
OMG are they ever delicious...I love them myself (hate Cheetos myself)...
Hubby will be home tomorrow and I am betting he will love them.

A bit pricey at 2.98 for 2 oz but I already discovered that they are so rich and full of flavor that you get satisfied with just a very small amount.
There are recipes available where you can make your own which I plan to do very soon.

This is supposed to be a fun thread.
As I try new recipes I will share them if they work out well.

Does anyone know of any decent tasting low/zero carb bread? That's my next challenge to find.

Just to be up front I do Keto, but I'm not trying to convert anyone. To each their own. I really miss bread. The holy grail of keto bread is called Fathead dough. You can find one version of it here https://howtothisandthat.com/keto-fathead-rolls/

I'll dig it some fun non keto recipes for my next post.

I've never learned to cook.

I decided to give up bread and have found that I love wrapping things in lettuce, like thai lettuce wraps so I was just searching the internet today for ideas of flavorful things that I can wrap in lettuce.

Also I was given a powerpot? pressure thing yesterday by an elderly relative who never used it.

I made collard greens with bone broth in it today and it came out great but I'm also googling around looking for ways to use this thing.
Began XPAP May 2016. Autoset Pressure min. 8 / max 15. Ramp off. ERP set at 2. No humidity. Sleepyhead software installed and being looked at daily, though only beginning to understand the data.

I just found out about fathead dough today and got some almond flour to try something made with the exact recipe you linked to.
Haven't had time yet to mix it up...been doing some house cleaning.

I did find a zero carb thin sliced bread on Amazon. It was late last night and I don't think I even looked at the reviews.
Might go and check it out in a bit.

We aren't going to do the full hard ass keto thing...just a more modified version with carbs cut way back for now.
But a good food is good food and if it's a keto recipe or not...willing to try it.

Anyone have a good crab cake recipe? I know it's not low carb and I don't care. It's for me and I won't be eating large portions anyway.
Had some in a restaurant that seemed to have breading tasting like stuffing...and the crab wasn't fishy tasting crab.
I am sure it wasn't fresh crab...no where to get stuff like that around here.
I want non fishy crab with the breading tasting a bit like cornbread stuffing.
The cook...won't share her recipes...sigh.

I've never learned how to make crab cakes. I just buy a box of them at Sam's Club, pop two in the oven, fix a salad and some sort of vegetable and it's dinner for my wife and I. As I've gotten older, I've learned there are some things that are not worth the effort to make myself. :lol:

I have tried those kind of crab cakes. I don't like them....tastes yucky to me. Ended up feeding them to the possums. :lol:

I admit I prefer the crab cakes at the Oklahoma City Museum of Art Cafe, but I can't afford to eat those very often.

Pugsy, my youngest is on keto and has lost 80 lbs in the past year. She says to just look at the package info and go by the carb count. She uses a wrap called Protein Up and buys it at WallyWorld. The part she loves about keto is consuming all the bacon she can eat :shock: . There are lots of recipes on the web too, best tasting one we found was for Philly steak wraps. Taste just like the original but she uses the protein up wraps and I use bread. You can swap out regular rice by using cauliflower rice.... so easy. When I make mashed potatos… a no-no for her, she makes cauliflower mash instead. Google is your friend on the diet, lots of recipes and articles to help out...…… and some of those recipes I even like. :wink:

The reason I am in a panic over the crab cakes...the ones I love are found at a little tiny tea room in a tiny little town not far from me and it's closing the end of Dec.
She wants to semi retire...and will still do a little catering on the side but she guards her recipes like they are the national secret.
Can't say as I blame her for wanting to work less...she's 70. :lol:
Maybe I can get her to just give me some hints to start with...like what kind of crab and where she gets it and the base for the breading.
Going to work on that....sweet talking her.

Right now the experiment to do list is quite long.

My blood work was like 0.4 whatever higher than normal for female...so just barely high. High Normal is like 4.40 and mine was 4.80 which is still a huge improvement over last years 6.40.
Males the high normal is 5.0.
I forget which value that is...and no time to go dig up the report to see it. Something to do with HDL or LDL or something.

My first batch of cheese crisps...didn't turn out like I wanted. They taste good but not crunchy at all.
Either I didn't let them bake long enough or it's because I didn't use low fat cheese (couldn't find any).
Back to the kitchen.
