Oura ring, I compare it with my notes of when I wake up and it seems to be fairly accurate. Couple times it might mistake a quick arousal for light sleep that I’ve noticed, but never had awakening that I at least remembered during when it says I am supposedly in deep sleep. Maybe didn’t register a shift from deep to light sleep. Does light sleep have weird breathing patterns like this?

I don't think so. May understanding is that we are either asleep or not asleep but perhaps the transition from arousal to asleep still shows that pattern.
It's not really a "weird" breathing pattern. It is normal for our breathing to be erratic and/or irregular when not asleep.
We just don't notice it while awake. So what you are seeing is actually "normal" arousal/awake breathing.

If you are that concerned about each breath....ask your doctor or find a sleep tech who can read wave forms.
We have a sleep tech (retired) who comes here on occasion and I can tell you right now he will call it arousal/awake breathing. He has corrected me on more than one occasion when I said I thought someone was asleep and he pointed out one little tiny irregularity that made it arousal breathing and not asleep breathing.
