Wilted Spinach Salad

6 cups spinach, wash good and tear
1/4 cup green onion, sliced thin
3 hard boiled eggs, chopped coarse
5 slices of bacon, fried crisp and crumbled

3 tbsp. bacon drippings
1/4 cup vinegar
2 tbsp. sugar
2 tbsp. water
1/2 tsp. salt
1/4 tsp. pepper

Cook bacon until crispy. Drain on paper towels. Reserve 3 tbsp. of the drippings in skillet
Combine spinach, eggs, and onion in a large bowl. Set aside.
Add vinegar, water, sugar, salt, and pepper to drippings skillet. Heat to boiling, stirring to blend.
Pour hot dressing over greens in bowl. Add crumbled bacon.
Serve immediately.

Barbee, thanks for the Wilted Spinach Salad recipe.

I did a slight modification by leaving the sugar out and I added Pecans.

It was delicious.

Well, I'd add that a cup of low-sodium V8 juice a day (900mg. of potassium) has stopped the night time leg cramps that I normally have on my keto diet. I'd wake up with a leg cramp, have to jump out of bed and walk it off *smile*. Now I find that I can sleep all night and not get awakened by leg cramps. So happy that I discovered this one. I had been taking a potassium and magnesium supplement that I've continued to take, but it just wasn't enough to do the job. I may try stopping the potassium supplement when I run out.

I really hate this feeling in the middle of the night when you jump up scalded. When I found out what was the problem, I also started to take supplements, I bought them from Canadian Pharmacy. But later I started to eat healthier food, like bananas, oranges, grapefruits, potatoes every day, and of course, spinach. Now, I can't imagine at least a week without spinach. I like it so much. So, Barbee, thanks so much for a new recipe!
