OT: Recipes

Someone asked me to share my recipe for homemade Irish Creme so I thought I would put it here and maybe others have some good recipes they would like to share....for anything...not just alcoholic beverages.

My love for experimenting goes way beyond cpap experiments....I love to cook and try new things and just like with my cpap experiments...some are winners and some the dogs won't even eat. Last week I did cabbage rolls...never had done them before and they turned out quite nicely.

Anyway here's the Irish Creme recipe that I have been using. It's pretty simple really. Some recipes called for whole eggs and raw eggs gross me out. This recipe suits my taste buds.
I do use Jamison Irish Whiskey but I suppose others could be used. I am not normally a whiskey drinker and had never really tasted the "good" stuff but my husband had me take a sip of it straight and man was it ever smooth..so much better than the cheap stuff I had back in my bar hopping days.

I Cup of heavy whipping cream
1-14 oz can sweetened condensed milk
1 & 2/3 Cup of Irish Whiskey
1 tsp of instant coffee
2 TBSP chocolate syrup
1 tsp almond extract
2 tsp vanilla extract

Pour it all in a blender and blend/puree on high for 20 to 30 seconds.
Pour into suitable container and refrigerate. Once I did this a couple of times I just saved the empty whiskey bottles.
Shake well before pouring to drink... they say it will keep well in the fridge for 3 to 4 weeks...never lasts that long at my house.
I totally ignore the potential caloric intake...something are just best left unknown.

Since I don't drink whiskey (any kind), I am posting the Rum Punch recipe I tried earlier this year. It's from Bobby Flay. Here is the recipe as is, but I personally cut the rum in half.

Rum Punch

1 cup fresh lime juice
1 cup grenadine syrup
2 cups white rum
1 cup dark rum
2 cups pineapple juice
2 cups orange juice
1 pinch nutmeg
Orange slice to garnish.

Mix ingredients together and chill for at least 1 hour.

Another great one is to make up fruit slushies and add half 7 up and white rum. You WILL get brain freeze, so take it easy.

Here's an excellent Asian-inspired pork marinade. I've been making this for years, and it's delicious. I typically use it on a pork tenderloin, but it'll work with any cut.

In a small pot, combine
1/2 C soy sauce
1/2 C sugar
2 cloves of garlic, minced or crushed
1 C water

Cook and stir over medium heat until the sugar dissolves.

That's it. Let it cool completely before submerging the pork in it.

I usually marinate in a zip-loc bag. Then I just turn the bag periodically in the fridge so all the meat can get marinated. While you're cooking the pork, you can boil the leftover marinade for a few minutes and use it as a sauce; if you want to thicken it, mix a little cornstarch in cold water and add it to the boiling marinade (will make more of a glaze).

Hmmm Pugsy, I wonder if your recipe would work with either brandy or rum? I will have to try it and report.

Here's another. I haven't tried this yet, but it's very simple, and the ingredients are probably in your kitchen already.

Microwave Mug Brownie

4 tablespoons sugar
4 tablespoons flour
2 tablespoons butter
2 tablespoons cocoa powder
2 tablespoons chocolate chips
1 egg yolk
1/3 cup water
1/4 teaspoon vanilla extract
Pinch of salt

Put the butter in a mug and microwave it until the butter is completely melted (about 40 seconds, depending on your microwave). Remove the mug and add sugar, water, vanilla, and salt. Stir. Then add the egg yolk, flour, and cocoa to the mug and fold the ingredients together until your batter is fully formed. (You could also add chopped nuts if you like them.) Top with chocolate chips and microwave the mug for 45 seconds.

Maid-Rites
1 pound ground beef
2 tablespoons vinegar (not white)
1 tablespoon instant minced onion
1 teaspoon salt
1½ cups Swanson’s chicken broth, boiling
2 tablespoons prepared ketchup
2 tablespoons prepared yellow mustard
Finely diced onion for topping
8 hamburger buns

Brown meat lightly making sure to break up; drain fat.
Add vinegar, onion, salt, ketchup and mustard. Stir well.
Add boiling broth.
Cover and simmer until meat is tender and liquid is absorbed.
Serve on hamburger buns with fresh chopped onions and mustard only.
Yield: 8 sandwiches.

Gluten free breads

Oat bread
2/3 cup lukewarm water
1 1/2 tablespoons yeast
2 teaspoons sugar
1 1 /2 cups rice flour
1 /2 cup almond flour
1 3/4 cups tapioca flour
1/4 cup sugar
1 tsp ginger
3 teaspoons xanthan gum
1/2 teaspoon salt
1 /2 cup quick oatmeal - Rolled oats make it chewier - sometimes I mix them
1 cup lukewarm water
4 tablespoons oil (any oil you like or melted butter)
1 teaspoon apple cider vinegar
4 eggs

1 In mixer, combine the flours, 1/4 c sugar, xantham gum, and salt.
2 Dissolve the 2 tsp sugar in the 2/3 cup of water and mix in the yeast. In a separate bowl combine the butter with the additional 1 cup water and vinegar.
3 With mixer on low speed, blend the dry ingredients. Slowly add the oil/water mixture. Blend in the eggs, 1 at a time. The dough should feel slightly warm. Pour the yeast mixture into the ingredients in the bowl and beat the highest speed for 2 minutes.
4 Place the bowl in a warm spot, cover with greased plastic wrap and a towel, and let rise approximately 1 hour.
5 Return the dough to the mixer and beat on high for 3 minutes. Spoon the dough into a greased, floured loaf pan. Fill 2/3 full, you may bake the remainder in greased muffin tins, etc. (or make all rolls~about 18). Sprinkle tops with some oats. Let the dough rise until it is slightly above the tops of the pans, about 45-60 minutes.
6 Preheat the oven to 400 F and bake the large loaf for approximately 1 hour. Bake the rolls 25 minutes
Note: I turn down the oven to 375-350 after 10 minutes. I also have little 4 inch cake pans that I use to made “kaiser roll” sized buns so I make 6 big rolls and 6 giant muffin rolls.

Pete’s Olive bread
I wanted the bread I used to buy when I worked in Halifax at Sunny side mall. There at Pete’s Fruitique he had bread made with black olives, onions and sun dried tomatoes.
In the recipe above use Olive oil for the oil.
While the first rise is happening, snip some (6) dried tomatoes into small pieces and pour boiling water over them. Chop 1/2 an onion into small pieces and I used about just over half of a 200ml can of black sliced olives, drained and chopped (next time I will use more) Fry the onions gently in some oil when they get soft add the olives stir at bit and add the drained tomatoes and 1/2 tsp Italians dried herbs (basically oregano and basil). Stir and leave it to cool - you should have about a cup of stuff in the pan.
Beat as in step 5. At the end of the 3 minutes stop the beaters and add everything in the frying pan and beat gently on low to mix it in. Continue step 5.
The result is softer and more subtle the Pete’s. Next time I will probably double the onions and olives and the herbs.

For those diabetics out there that love cake, but can't eat it.....

Sugar Free Cake

Sugar Free Cake Mix (Pillsbury sells a Yellow & Chocolate)
1 Can (12 oz or 1.5 cups if using a bottle) Diet Soda (Lemon-Lime for Yellow & Cola for Chocolate)

Pre-heat oven to 350. Spray a 9x13 cake pan with cooking spray.

Pour cake mix into a bowl. Break up clumps with your fingers (or I use a whisk). Slowly fold soda in, continuing to fold as you go, until a batter is formed. (It will seem like you don't have enough liquid, then like too much, but it WILL mix in). Pour into cake pan and bake for 25-30 minute until a toothpick comes out clean.

Top with sugar free cool whip and fresh strawberries.

Note: I had this last night (chocolate) and it was so good (for a sugar free cake that is)

For breakfast:
2 slices bacon cut up
1 scallion, thinly sliced
2 stalks fresh asparagus
2 eggs
1 Tbsp heavy whipping cream
Cook the bacon; add scallion and asparagus, cook in the rendered fat (yum) until asparagus is slightly softened.
Meanwhile, beat the eggs with the cream. Add to pan and mix together. Cook until eggs are barely wiggly.
Season to taste (taste first, bacon has salt)
Enjoy.

Fruit Dip

One can of Coco Lopez Cream of Coconut
One 8oz package of Cream cheese.
Just blend together.

I always serve with fresh strawberries and pineapple but you can use any kind of fruit.
Always the hit of the party!

You can find it in most grocery stores, usually in the aisle with the wine or with the mixers like sour mix. They also have "generic" ones.
It is the same stuff they use in Pina Colada's.
