OT- What's for dinner?

Grilled cheese and tomato soup sounds good. It's getting cold here and that will warm me up. My usual is spinach salad, same old thing every day.

Supper is skirt steak, sweet potatoes, and brussels sprouts.
Lunch is leftover Schlotzky's.
Their sourdough is to die for (diabetic), so I had to save half for later.

Meatloaf and potato salad from the garden (potatoes, leeks, carrots, parsley from the last harvest)). I warm up the potato salad however that way it doesn't seem so "out of season" . I made this a couple of days ago because currently my kitchen is out of commission for the last of the renos to patch the holes left by the electricians and plumbers and to get a new paint job. The new drywall is up and tomorrow they are starting the plastering and sanding. The cat is complaining bitterly that his food bowls have been moved out of the kitchen. Many times a day he stands where his bowls used to be and complains he is being starved to death.

The garden has been put to bed - we had snow earlier this month already.
I have many containers of tomato sauce in the freezer as well as beans and shredded zuchinni. I have about 20lbs of potatoes in the entry way (dark and cold) half a drawer full of carrots in the fridge and lots of dried herbs.

First of the week I always have leftovers from the weekend for supper.
My husband is an OTR truck driver so I always cook extra on either Sat or Sun (depends on when he is leaving out) so that he can take meals with him because he says I am a better cook than the stuff he can get at the truck stops...not to mention save money and it's better for him anyway.
I almost always end up with enough to feed him for a few days and myself for a few days (which gets boring to me) but since I am lazy I eat leftovers.

Tonight...meatloaf...potatoes au gratin (new recipe I tried instead of the usual mashed potatoes) and steamed fresh veggies (broccoli, baby carrots and cauliflower).

He likes quiche for breakfast so I usually make some sort of quiche and keep one slice for me to eat but this weekend I gave my slice to my mother yesterday. She loves it and won't make it for herself (she doesn't cook from scratch much anymore) and that way I know she gets a really good couple of meals because my slices are enough for 2 meals.
This weekend the quiche was a little concoction of my own...added cheese, pork sausage and hash browns to the egg mixture.

Last night we had garlic Parmesan wings (easy and quick thanks to the Instant Pot), green beans, and raw veggie "crudités" with homemade ranch dip (made from homemade mayo and homemade dairy kefir). Yummy!

Didn't know about "instant" pot, I thought you had to grow it...........

I just made a batch of chicken enchiladas, only downside is my family just decided they are coming for dinner

By the way, just had a grilled cheese and tomatoe soup for lunch.... yummy best comfort food around!
Started cpap in 2010.. still at it with great results.

Just this week was talking on FB with friends and 2 of them raved over their electric pressure cooker. I didn't even know there was such a thing. One said theirs is Oster brand. I had mentioned trying one of those FB tips that's been circulating about submerging a can of sweetened condensed milk in water in a crock pot on low for 8 hours and it is supposed to come out as caramel. I was proud of my experiment proving it really works. Then someone burst my bubble saying they accomplished the same thing in 15 minutes in their electric pressure cooker. It just may be on my Christmas wish list, if it can accommodate cooking for at least 6 every meal.

The mention of meatloaf sounds good. My family likes it stuffed with mashed potatoes and cheese on the inside. Ground beef has been too expensive for our crew to have it often. As for the original question. I'm asking myself that very thing.

The nice thing about meat loaf is that it can extend 1 lb of beef to feed many. Lots of carrots, celery, onions and bread/rice/mashed potatoes to extend it. And you can use a mix of beef and pork too. Plus it tastes good cold as a sandwich filling.

Your question made me look at the clock. Now, I really have to start thinking about dinner.

Probably chicken cutlets... since the chicken has been defrosting since this morning, with a baked potato and a salad or vegetable. I think I'll bake pumpkin bread... granddaughter loves it. NOT from scratch tho... I'm over that.

Do you put rye (bread) seeds in the pot roast? My mother used to do that. Delish!

A green apple and maybe some edamame seeds.....there was chili cook off fundraiser at work and the alligator chili only won second place. I can hardly move. I wish I weren't such a glutton, but the cooler temps or something irritated the sinuses and as usual I lost self control and ate like wild hog foraging in the dirt.
