If you haven't been using "data" recently, I'd set it for straight 10 cm. with no EPR. Can't answer your humidity questions. I've been using cool "passover" since I started (didn't like the heated humidity).
My bedroom is in the 60s and I route the hose right into/under the covers to add a little warmth with body heat. Works OK.

Ignore the sarcastic jerk who thinks Autos and ranges of pressures solve all problems.
My point was to use your previous setting which you said was "the best" for a period of time and see how that setting works.
Then, after a week or so, if some adjustments are warranted, make them then.......including trying a range of pressures.
But, you need a reference point from your previous setting to evaluate it with your (new?) machine.

To set the ERP, if you are using a setting of auto 8-12. I'd put the machine on cpap 12 and test out the different ERP settings. If you use apap 8-12 and it goes up to 12 in the middle of the night
and stays there a while, you want to know what you will be comfortable with for exhale at 12.

That looks pretty good. At least you now know that your previous setting was about "spot on". Give it awhile and see if things improve. Given last night's report I am not so sure that the previous trial with cpap was all that "spot on" at 10 cm.
It most likely was good enough for bringing the AHI down to well within acceptable limits but from what we see with last nights Flow Limitations that fixed pressure of 10 probably didn't do much to help the FLs.
Now do the FLs need reducing??? Dunno that answer yet but there's a definite maybe there and then the other question of were/are the FLs responsible for feeling crappy and not feeling the good numbers she had with the first cpap? Dunno that answer yet either. It's another maybe.

For the record, the updated reports with the flow limitations were posted about two hours after I posted my other response.
However, thanks for taking me out of context yet again.
But, that's why I suggest to monitor the results for a period of time. Maybe a few nights or longer.
To the OP "desiderata", I would suggest trying doing some nasal cleansing before bedtime......if you're not already or are experiencing some nasal congestion. Lots of things can affect "flow limitations"......sleeping position, heated humidity, etc.

and anybody that knows anything at all about reading the charts would spot that there was a problem, just as Pugsy did, recognizing that they were clearly not "spot on".

simply put, if last nights pressure maxing at 11 didn't control things, then there's no possible way that your previous fixed pressure of 10 would have.

I was referring to the 10 cm cpap pressure that you reportedly used in the past. If you used a range in the past you didn't mention a range that I ever saw. Doesn't really matter. For all practical purposes your machine pegged out at 11 cm last night...so it made itself a fixed pressure despite the auto settings.
PR is right...if 11 cm last night didn't do a good job there's not much chance of the prior 10 cpap doing anything with those FLs assuming you had them back with the first cpap trial.
If you had enough nasal congestion to cause all those FLs I am betting you would know it right away and probably not be able to use nasal pillows without having to do a lot of mouth breathing.
At some point in your experiments I would like to see you try the regular apap mode to see if it does a better job fighting the FLs. No rush though. Just something to keep in mind for a later date. I don't anticipate it making any difference though.
It's not like your pressure last night fluctuated much once it got up to 11.
