I am now using VCO for cooking almost everything now.... I also use coconut flour and make some baked goods. Just bought some coconut water to try, and I like it very much. I've been reading about using VCO with pets, and my beautiful blue-eyed boy LOVES it. He has had a nagging gunky eye of late...allergic to something....and since taking the VCO his eye is looking better, he has more energy, and the coat is super silky and nice. There is a brand for pets, but it is super expensive and is really the same thing as I buy for myself. I just give him up to 1 tsp. a day...usually licks it up from my palm. To figure amount for cats or dogs, use 1 tsp per 10lbs of body weight. My kitty weighs about 14 lbs., but I am working my way up to 1.5 tsps.

One thing I know for sure....when I take in 2-4 Tbsp's of VCO a day, my appetite practically vanishes!

Yes, that blue eyed beauty is my cat! He is a seal point, bi-color Ragdoll. I adopted him in '08 from folks who could no longer care for him. He is a joy and makes me smile each and every day.

Which as usual has nothing to do with this conversation.

Both are nice on the skin.
It won't mix with silicone oil, they will layer like oil and water. With the proper surfactant you can make a good emulsion (cream) with the two oils in water.

Or mix cocoa powder and cocoa butter in it and you have chocolate!

Beware that there's a lot of sugar in coconut water. Not added sugar, but think of it as a type of juice--natural sugar. Still has the same effect on your body, natural or not. I like coconut water, but it's off my list for now.

Coconut water is the liquid that you can hear sloshing around in a coconut when you shake it. It is sweet, probably high in sugars. Coconut milk is not the same as coconut water. It's made by pressing the white coconut meat from ripe coconuts. Common is SE Asian cuisine. If you've had anything Thai, you've had coconut milk. There are two common grades available: thin and thick. The thin stuff, sometimes called "lite" results fromt he second pressing of the coconut meat. It contains less coconut oil, and is probably higher in carbs, but I haven't looked, since I don't use it. I buy the thick variety, which is about 20% coconut oil and about 2.5% carbs (sugars). 2.5 g in 100g of coconut milk isn't much in the way of carbs, so it's another way to get coconut oil if your store doesn't carry it. The oil consists of saturated fatty acids (which are good - it's the trans-fats that are bad for you) and medium chain triglycerides (which are also good). So long as you keep your insulin level low by keeping your carb consumption low, it's fine to consume triglycerides. Your body is a multi-fuel engine and runs just fine on fatty acids, triglycerides, glucose and ketones. Your liver is like a refinery. It does all the necessary conversion to turn whatever is available into the proper fuel, in the proper amounts. Any excess is squirreled away as fat.

You can use coconut milk as the base for a great stir fry. It's slightly sweet, and smells slightly of coconut, so it's not like biting into a Mounds bar. Dissolve some red Thai curry paste into 1/4 can of coconut milk in a frying pan, toss in some meat, cook until very lightly browned, toss in some veggies, fry until they're warmed but still crisp and you've got a great stir fry. There was a time when I'd say serve with rice. :^(

You can even use coconut milk and curry paste in scrambled eggs, Thai style. It's good eats.

Love it!

Another yummy coconut thing:

Uncle Harry's Raw Organic Coconut Spread

OMG this stuff is good....sounds very similar to the Nutiva Coconut Manna. I've got to try the manna...will have to order it since no one locally seems to have it. My local hippie health food store has the Coconut Spread.

I use this stuff in my coffee, and if I get attacked with wanting something carbish, I slowly eat a spoonful of it and the cravings are satisfied and gone. Magical stuff. Good thing I like coconut!

Weezy

I make my own coconut butter (same as coconut manna or coconut cream, from what I understand) because it's so darn expensive to buy.

You just take unsweetened coconut flakes (which I buy in bulk at WF for a few dollars a pound) and grind it in the food processor until it becomes a smooth liquid. Now this is easier said than done. It takes some time and you have to keep scraping down the sides of the processor bowl. But I've found that adding a teaspoon or two of coconut oil makes the process much easier and faster, about 1/4 the time it takes to grind into butter without ihe oil. Once the coconut butter cools and solidifies, the coconut oil layer will be on top and you have to decide if you want to scrape it off, or warm up the coconut butter to be able to mix it back in.

My first taste of coconut butter was a jar of Artisana, that sucker was almost $10 for a little jar. I can make it myself for a lot less, and it comes out exactly the same.
