OT- What sounds good to eat for Christmas Day lunch?

Post by Cardsfan » Sat Dec 16, 2017 8:51 am

By then, I am tired of the traditional foods, had turkey for Thanksgiving, will have big traditional meal the night before, so what's for lunch on Christmas Day at your place? I'm thinking a big pot of Christmas chili Mac.

Prime Rib, Mashed Taters & Gravy, Noodles, Yeast Rolls and Cherry Wine, but I won't be having it. Turkey is fine. I have my Chili, every night at 1 A.M. Mac ruins Chili, but I like it too. Jim

BBQ smoked Brisket with guacamole and vinegarette-based coleslaw or green bean salad.

For morning, My wife makes an egg dish that has eggs, hash browns, cheese, and sausage. Typically 2-3 batches of them which are prepared the night before and just popped into the oven.

A variety of juices, mini muffins and a waffle maker for those who would prefer that.

Easy, fast, not a lot out prep.

Later a ham and some simple sides will be available, for those still there.

Since it's just the two of us, we have started having lobster for Christmas dinner. It started off as lobster and steak, but we have found the lobster is enough by it's self. Then, I will fix a rib roast for New Years.

We do our big celebration on Christmas Eve and by mid day Christmas, everybody is gone. We do appetizers all afternoon/evening on Christmas Eve so we tend to just pull out whatever leftovers we want and munch on Christmas Day. This year's menu includes shrimp (brother-in-law loves), swedish meatballs (father-in-law loves), mini weiners in barbecue sauce (son loves), veggie tray & dip, cheese & cracker platter, onion dip/chips (daughter loves), cashews, and punch. For those that want something a little hardier for dinner, we have sliced ham, ham biscuits, chicken salad biscuits, potato salad, and assorted candies, brownies, cookies and cakes for dessert.

There will be plenty of leftovers to satisfy us on Christmas Day!

We used to do a FULL dinner after snacking all afternoon, but it's too much work and everybody commented how eating all that dinner was too much. Everybody said to just do appetizers, then the sandwich biscuits for those that wanted. Less work for me so I took that and ran with it!

Home made (or even canned) biscuits, warm from the oven, sounds nice, no matter what you put on it.

Just take any kind of biscuit (or dinner roll), slice it in half, and put a slice of ham or a scoop of chicken salad on it. Makes a mini sandwich/slider type thing.

We'll make them ahead of time (probably that morning - we are cooking the ham Saturday), have them on a platter and people can just grab them. They're small so people could eat a couple if they want.

We were just going to do ham, but my daughter requested chicken salad too.

If we have any left, they may get eaten for breakfast! We usually do a breakfast casserole, but I don't have it in me this year to make it. So, we'll have cinnamon rolls (my favorite), we can make eggs and we've got a fresh batch of pork sausage that we already made into patties and froze so we can cook that Christmas morning.

How about bagels, lox (nova) and cream cheese. Cut up onions and roma tomatoes with a drizzle of olive oil. Scrambled eggs with thinly sliced onions and cream cheese. Several different types of pastries, nuts, dark chocolate, etc. for munching later.

We will take ridiculously thick steaks and marinade them the nite before in a locally made steak sauce. It's called Andreas, best there is.
Grill them outside, serve with baked potato, then finish off whatever sweets leftover from Christmas Eve. A nip of apple pie moonshine afterwards. Good stuff

Hey bigdave- I live about 10 miles from where they make Andreas Steak Sauce. They also have a restaurant there. My husband puts it on steaks, and in meatloaf. It's good stuff for sure.
