CPAP is not for the timid, is it? Regarding your leg movements, your doctor should consider ordering some lab work: a FULL iron panel (not just ferritin), as well as folate, magnesium, and B12. If sleep apnea caused the weight gain, why didn’t the weight disappear once the sleep apnea was successfully treated (with no other changes in lifestyle)? Some bells can't be un-rung? For nasal breathers, I would recommend a nasal mask (pillows, even). Less potential for leaks.
Ears can be a problem. If you experience pain, you may need to talk to your doctor about reducing the pressure, and gradually working up. A little transient, tolerable discomfort may be OK.

Does it happen when you are wide awake or when you're nodding off to sleep? If the latter, my guess would be a pressure pulse to determine whether your airways is closed (obstructive event) vs. open (central).

I can only speak for myself. Per EEG, I wake up ~50 times per hour in REM. I know I can wake up and slide right back into a dream, often the same one.
