Here's what I see:
Three things seem to be happening together:
A drop in flow rate
Some flow limitations
Leaks.
My guess is you're opening your mouth, not mask movement.
Congestion?
EPAP too low?

I am reading that the CPAP does not treat sleep apnea it just allows the patient more O2 to sleep better. Either you're reading the wrong stuff, or you're misunderstanding what your read. Your maximum pressure is too low for when you need it. Look at the way your flow limitations and snores drive the pressure up to 15 (or - any lower max) and it sticks there, without improving your breathing. Look at the change in your chart starting at 4 AM.
1) There's a sudden drop in how much air you're breathing
2) This gets even worse at 5:30 and you start snoring.
3) You also start leaking at the same time.
